Sydney’s First Organic Sourdough Bakery

In 1997 Infinity Bakery opened as Sydney’s first organic sourdough bakery. It all started when Australian chef Phillip Searle, inspired by a classic Parisian bakery, brought the ancient craft of ‘Levain’ baking traditions back to Darlinghurst. He was one of the first to teach customers about the benefits of good bread.

Now under the guidance of brother and sister duo, William and Sophie Petersen, Infinity Bakery has recharged its heritage with fresh new energy. Today it’s about ensuring they live up to that philosophy – make good bread and educating people about it.

Will and Sophie are dedicated to using local produce and sustainable practices while honouring the authentic craft of organic sourdough baking. They’re happiest providing the community with wholesome and delicious baked goods… and it’s as simple as that.


Our Suppliers

We have achieved over 20 years of growth that would not of been without the support of many hands, that also include our dedicated suppliers.

Wholegrain Milling Flour

Wholegrain Milling are organic and sustainable flour suppliers with most of their produce coming from New South Wales (NSW). Wholegrain was one of the first flour millers to revive the organic flour industry, making it possible for artisan bakers to thrive in Australia.

Gabriel Coffee

Gabriel Coffee have been roasting green beans in Sydney for 12 years. They are constantly working on creating a stronger connection between the coffee farmers and that cup of goodness you enjoy each morning.


Nicholson & Saville

We’ve been going to Nicholson & Saville from the beginning for premium olive oils, cheese and meats. We love that their produce is sourced mainly from NSW, Victoria or South Australia, they know their stuff!

Urban Beehive Honey

We love supporting Doug Purdie and Vicky brown’s plight to protect local bee populations.

They have been  busy creating and harvesting hives across Sydney from back-yards in Marrickville to office block rooftops in the CBD. The only honey with the real taste of Sydney!

Country Valley Milk

Their slogan says it all “Milk from cows in picton”, it's really simple stuff. The herd is their priority and that comes through in quality and taste!
